Steamed Pomfret

Darling is an avid fan of fish...Try my best to learn to cook fish...

Steamed Pomfret


Ingredients
2 pomfrets (or any other fish)
1 small piece of young ginger (cut into thin strips)
Soy sauce
Garlic and shallots (chopped finely)
A tablespoom of anchovies (tiny ones)
A bunch of parsley and spring onions
A tablepoon of sesame oil
A pinch of sugar

Instructions
1 Fry shallots, garlic and anchovies until they turn crispy and set aside.
2 Sear the fish and sprinkle young ginger on it. Pour some soy sauce over it and steam. Set aside.
3 Mix some soy sauce, sesame oil, a little water and sugar in a sauce pan and simmer.
4 Pour sauce over the fish and top with fried shallots, garlic and anchovies.
5 Garnish with lots of parsley and spring onions. Parsley adds flavour to the dish!

Voila!

Smooth tofu with Crispy Toppings

Here's my first smooth tofu (beancurd)...
and as usual...the best for my loved one...
I bought organic one...a little bit more expensive but it is healthier than the common one..
Smooth tofu with Crispy Toppings


Ingredients
1 piece of tofu
Few cloves of garlic and shallots
1 tablespoon of Japanese anchovies (those tiny little ones)
1 tablespoon of dried shrimps
1 teaspoon of chicken stock
1 teaspoon of oyster sauce
1 teaspoon of sesame oil
1 teaspoon of water
a pinch of sugar

Instructions
1 Fry dried shrimps and anchovies until crisp. Sprinkle very little sugar on them and set aside.
2 Fry shallots and garlic until soft and fragrant. Lift them up before it turns brown and set aside.

3 Steam the tofu and set aside. Place the garlic, shallots, anchovies and dried shrimps on it.
4 Mix the oyster sauce, chicken stock, sesame oil, water and sugar in a sauce pan and simmer.
5 Pour sauce over the tofu. Garnish with parsley and red chilli for colour!

There you go,
smooth tofu with crispy toppings!

Brinjal and Beans with Dried Shrimps

Had a similar dish like this at a restaurant outside, so I decided to prepare this for him, with lesser oil and no MSG...a healthier choice for him.


Brinjal and Beans with Dried Shrimps


Ingredients
Few cloves of garlic and shallots (chopped coarsely)
2 spoons of dried shrimps (fried to crisp)
1 spoon of chilli paste (cili boh)
1 teaspoon of tamarind paste (dissolve in a little water)
1 bird's chilli (sliced)
1 Brinjal (cut into 1" bars)
French beans (cut into 1" length)
Four-angled beans (cut into 1" length)
Prawns

Instructions
1 Fry some shallots and garlic. Add in dried shrimps and fry till fragrant.
2 Add chilli paste, tamarind paste, bird's chilli, prawns and a little water.
3 Add in brinjal and after half-cooked, add in french beans and four-angled beans.
4 Stir in and serve on a nice plate. Garnish with chilli if you want!

Ebi Agedashi Tofu

Found one Japanese smooth tofu in the fridge,
too little for a dish, but too much for a snack...
So I created this as an appetizer :

Ebi Agedashi Tofu



Ingredients
Japanese smooth tofu (beancurd)
Cornstarch
A little sugar
Prawns
Shoyu
Herbs

Instructions
1 Cut the tofu (beancurd) into bite size. Coat with cornstarch and a little sugar and fry.
2 Arrange the tofu on a nice plate.
3 Fry the ebi (prawns) and put one on each tofu.
4 Simmer a little shoyu mixed with water and sugar.
5 Pour sauce on tofu and garnish with thyme or parsley.

There you go, an appetizer in 15 minutes!

Steamed Banana Muffin

Yellow everybody!


I'd love to bake cakes or cookies for him but I do not have any oven to do so.
Finally found a recipe of a muffin/cake that I can make without an oven! All I need is a wok to steam! Let's see what I made :

Steamed Banana Muffin


Ingredients
100g of multipurpose flour
1 teaspoon of baking powder
Half cup of icing sugar
1 egg
1 tablespoon of butter
2 tablespoon of water
2 ripe bananas
Walnut/Cashew nuts/Chocolate Chips

Instructions
1 Mix flour with baking powder.
2 Add in icing sugar, egg, butter and water.
3 Whisk until it is fully cobined and the mixture reaches ribbony stage(flows nicely without clumps).
4 Mashed bananas and combine with the mixture.
5 Scoop mixture into muffin cups and top it with any toppings of your choice. I used walnuts.
6 Steam in a wok or a steamer for about 15 minutes. Once it browns and the fibers appear, the muffins are ready!

Breakfast for darling to bring to work the next day!
