Rosemary Salmon with Citrus Butter Sauce

It's fish time again!

It's important to include meat in his meal to balance his diet.
And fish is definitely a healthy choice. Bought a slice of salmon and can't wait to share what I do with it! I love the cute little lime I used for garnishing, it looked like a tiny mandarin orange!
*Salmon is good for him, though a little more expensive than other fish, but it's worth to spend!
+ The herbs I used for this dish are also nutritious and acts as remedy! Rosemary is good for our nervous system and ward off sickness while thyme is beneficial for coughs which are related to colds and flu, as well as for asthmatics. 

Rosemary Salmon with Citrus Butter Sauce


Ingredients
A slice of salmon (or any other fish of your choice)
A little soy sauce
Sugar
1 tablespoon of lime juice (you can try orange or lemon)
Lots of rosemary and thyme
Butter
Honey

Instructions
1 Drizzle some soy sauce and sugar all over the fish. Sprinkle rosemary and thymes as well.
2 Pan grill the fish in little oil. Place the fish on a plate.
3 Pour lime juice and butter in a saucepan. Add in lots of rosemary and  thyme herbs.
4 Add a little honey and let it simmer.
5 Drizzle butter sauce over the fish.
6 Serve with crispy and fragrant garlic.

Best eaten while still hot!
The herbs' fragrance in the butter sauce is really appetizing, you should really try it!

Japanese Tofu with Vegetables


♥ Perfect dinner for 2 ♥




Darling loves beancurd (tofu)...it's affordable and good for the skin.
I cooked mine with lots of vegetables:

Japanese Beancurd with Broccoli Island


Ingredients
A few florets of broccoli
A pack of beancurd
Whatever vegetables you want to add in
Garlic and shallots (chopped)
Carrots (diced)
Corn nibblets
Green peas
2 Mushrooms (sliced thinly)
3 tablespoons of chicken stock
A little cornstarch
A dash of pepper and sugar

Instructions
1 Steam broccoli and enoki mushroom (you can substitute with any vegetables you wish) and set to cool.
2 Arrange the broccoli in the middle of the plate (like an island) as well as the enoki mushrooms.
3 Coat the beancurd with some cornstarch, sugar and salt. Fry and arrange around the "island" of broccoli.
4 Fry some garlic and shallots until fragrant. Add water, mushrooms, chicken stock, some sugar and pepper.
5 Add corn. carrot and green peas and let it simmer.
6 Pour in some cornstarch mixed in water to slightly thicken the sauce.
7 Pour the vegetable sauce around the island of broccoli and serve hot.

Spicy French Beans with Onions

Hi there,
Last night, I prepared dinner for him again, this time 3 dishes...
Here's the first dish, it is easy and quick to prepare.
You'll need to chop lots and lots of garlic and shallots.
But its worth the effort, garlic and shallots are good for health.
Garlic lowers cholestrol and have many other benefits while shallots help eliminate toxin from liver and kills cancerous cells.
I need to find what's the best for his health!  :)
Spicy French Beans with Onions


Ingredients
French beans (cut slanted about 5cm long)
Prawns (deshelled)
1 bulb of big onions (cut into big pieces)
2 bulbs of shallot (chopped)
1 bulb of garlic (chopped) 
2 tablespoon of chilli paste
1 teaspoon of belacan powder
A pinch of sugar

Instructions
1 Fry shallots and garlic in some oil untill fragrant. Add in big onion strips.
2 Add in chilli paste, belacan powder and sugar.
3. Add prawns and french beans. Keep stirring until big onions get soft.
4. Dish out when french beans are fully cooked.

Serve!

Steamed Fish with Fragrant Garlic

Hi there!

Find myself interested in fish dishes recently, so I bought this piece of fish from Jusco...
I wanted to prepare something healthy for him, so I prepared this dish called

Steamed Fish with Fragrant Garlic


Ingredients
A slice of fish (approximately 1" thick)
Ginger (stripped)
Lime
Ginger (chopped finely)
Garlic (chopped)
Shallot (chopped)
Soy sauce
Sesame oil
Sugar and pepper

Instructions
1 Clean the fish and pat dry. Rub the fish with a little soy sauce, lime juice, pepper and ginger strips.
2 Steam the fish along with the ginger strips.
3 Fry chopped garlic, shallots and ginger in propotion of 5 : 2 : 1 until fragrant and crispy. Set aside.
4 Once the fish is cooked, place the fried garlic, shallots and ginger on the fish.
5 Combine a little soy sauce, sesame oil, water and  sugar in a pan. Simmer for a few seconds.
6 Pour the sauce mixture on the fish.

Japanese Bean Curd with Vegetables

Few days ago, I tried adding bean curd into my cooking...so basically
this is my first time cooking bean curd!
Wow...so many "first times"...

This dish is easy to make, healthy and the ingredients are quite cheap! A pack of japanese beancurd only costs me RM1.80 (approximately USD0.60) while the other vegetables I added are common vegetables. The sauce of this dish is very delicious and goes along with plain white rice.

Here's what I prepared :

Japanese Bean Curd with Vegetables


Ingredients
1 pack of Japanese beancurd
1 egg
4 mushrooms (sliced)
A few florets of broccoli
Carrot (diced)
Corns
Green peas
Garlic & Shallots (chopped finely)
Chicken stock/broth
Sugar and salt
Pepper powder

Instructions
1 Cut the beancurd into 1.5cm thick pieces.
2 Steam the beancurds and after that arrange them on a nice plate.
3 Fry some garlic and shallots until fragrant. Add adequate chicken stock/broth.
4 Put in mushrooms, broccoli, all other vegetables and some water.
5 Add the egg in the sauce as well as a pinch of sugar, salt and pepper.
6 Pour the vegetables in sauce on the beancurds arranged on the plate earlier.

Love is in the Air

Love is in the air!
A simple meal cooked with lots of
specially just for Valentines Day...
This simple meal is called

Love


Ingredients
Eggs (beaten with sugar and a little soy sauce)
Corn nibblets
Potatoes (cut into sticks)
Sausages
Lots and lots of

Instructions
1. Fry the potato sticks in little oil and set aside.
2. Steam the corn nibblets and sausages in a wok or steamer.
3. Once the corn look puffy, dish out and mix with a little butter.
4. Pour the egg mixture in a mould placed on a pan without any oil.
5. Once the egg look opaque, lift up the mould and flip the egg to slightly brown the other side.
6. Serve on a nice plate with the sausages, fries, corn and garnish with parsley, sliced cucumber and tomatoes.

Pan-Grilled Salmon with Herbs

Yay..!
Proud to announce that yesterday I had cooked fish for the first time in my life!


Knowing that my dear darling had huge concerns on his hair, I browse through websites and found that salmon is among the top 10 food with hair nourishing properties.


I added some french beans as an edible side garnishing as it is known to offer cardiovascular protection, lower high blood pressure, promotes a healthy colon, have strong anti-inflammatory effects as well as preventing DNA damage and weakening of bones.


Meanwhile, enoki mushrooms has a protective effect against degenerative diseases like Alzheimers’ and age-related decline in cognitive function.
A recipe of my own, I prepared this dish called


Pan-grilled Salmon with Herbs

Ingredients
Salmon fish (about 3cm thick)
Garlic (sliced)
Shallots (diced)
Pandanus Leaf (Pandan Leaf)
Soy sauce
Green Lime
Thyme, Parsley & Other Herbs
A sprinkle of cornstarch
Sugar & Salt

Side garnishings
French beans
Enoki mushrooms (Velvet shanks)
Carrot (cut thinly)


Instructions
1. Marinate the salmon with some light soy sauce, sugar, salt, cornstarch (a little) lime juice,
    and sprinkle some thyme and parsley on both sides of the fish.
2. Heat a little olive oil in pan and fry some shallots and garlic. Add the pandan leaves.
3. Pan-grill the salmon on the garlic and pandan leaves to get the fragrance in the fish.
4. Be careful when flipping the fish as it flakes easily once cooked.
5. Dish out the fish and place the fried garlic on the fish. 
6. Use the remaining of the marinating sauce earlier and pour into the same pan. It should smell  
    fragrant as there are traces of herbs and juices from the fish. Stir and drizzle the sauce on the
    fish. Set aside. Do not wash the pan.
7. Using the same pan, pan-fry the french beans, carrot and enoki mushrooms.
8. Arrange the vegetables on the fish.

Voila!

Garnishing Plain White Rice


A plate of white rice may seem boring and dull, but here's a tip on how to make your plain white rice appear to be more tempting..!

Firstly, use a bowl to "shape" the rice into a dome and place it on a plate.
Next, just sprinkle some black sesame on top of the rice and garnish with parsley or coriander leaves or even mint leaves.

Healthy Vegetable Soup

Here's one of Malaysia's famous recipe of healthy soup...


Some call it ABC soup, because we mix several types of vegetables in the soup.
Here's how it look like...

Ingredients
Anchovies (cleaned)
Potatoes (cubed)
Onions (Cut)
Garlic Cloves (pounded)
Cabbage
Tomatoes (wedged)
Carrot (diced)
Mushrooms (sliced)
A dash of sugar and salt
Chicken stock/granules (optional)

Instructions
1. Put in the achovies and all the vegetables in a pot of water.
2. Bring to boil. Once boiling, turn the heat lower and let it simmer.
3. Add in a dash of sugar, salt or pepper to taste.
4. If you are into more flavourful soup, you can add a little chicken stock.
   * I made mine without the chicken stock.


I opt for a healthier choice of soup for my darling!

Mixed Vegetables in a Pot

Hi everyone!
I'm back...was busy with Chinese New Year stuff for the past few days...
Pheew! Finally it's over...and here I am to share another simple recipe.
This dish was prepared by me..it looked a little boring, that's because this dish was prepared for older guests we had for Chinese New Year.

Mom said that they can't really chew...so the vegetables has to be super soft and easily swallowed.

 Mixed Vegetables in a Pot


Ingredients
Cauliflower
Brocolli
Carrot (sliced)
Garlic (chopped)
Green bean
Other vegetables you have in your kitchen

Instructions
1. Steam all vegetables in a steamer or boil them in a wok. Dish out.
    (this step is taken to soften the vegetables to ease the chewing for old people! )
2. Fry chopped garlic in olive oil until fragrant.
3. Add all vegetables and stir fry. Add 2 cups of water, a little salt, pepper and sugar.
    (Be careful not to add too much salt and sugar for them!)
4. Add some cornflour dissolved in water into the cooking to slightly thicken the sauce.
5. Serve in a pot.

Ta-da! 

A hearty dish for the elderlies!
