Spicy squid with french beans



It was a cold day and I wanted to some "heat", so I cooked this for him.

Darlin' said it is sooo appetizing!
♥♥Had a smile on my face! ♥♥
Glad to serve him something hot when he is having flu.

Spicy Squid with French Beans


Ingredients
Squids (cut into squares and gently make criss-cross pattern)
French beans
2 or 3 tbsp of chilli paste
Some belacan powder
Onions, garlic, shallots (all chopped)
Some tamarind juice (just mix tamarind pulp in some water)
Sugar and salt to taste

Instructions
1. Fry onions, garlic and shallots in a little olive oil until fragrant.
   (I prefer olive oil as it is healthier, you can also use normal cooking oil)
2. Add in chilli paste and a tablespoon of belacan powder, some sugar and salt.
3. Add in a tablespoon of tamarind juice and simmer for a while and add french beans and squid.
4. Stir-fry so that all squids are coated with chilli paste.
5. Serve hot!

Vegetables with cashew nuts

Hi there...I created a new dish 2 days ago...it's stir fried leafy vegetable surrounded by brocolli, cauliflower and cashew nuts.
This dish was created because of :

1) The leafy vegetable he has in the fridge had almost rotten and the ones I got...only consists of less than...10 leaves..?
2) The brocolli and cauliflowers he has in the fridge was too little to be cooked as a single dish...
3) I didn't want to mix the leafy vegetables together with brocolli, cauliflower etc as it will look like "economy mixed vege"... sure enough I want the best for my darling ♥

So...I created a dish that combines 2 dishes in one for those who encounters problem of too little vegetable to be cooked as 1 dish. Ta-da...

Vegetables with cashew nuts


Ingredients
For the Outer Ring
A few florets of brocolli
A few florets of cauliflower
Cashew Nuts (fried)
Carrots (diced)
Yelow onion (cut into rings)
Shallots (sliced)
Salt, sugar, pepper

For the Inner Part
Leafy vegetables (the one in pic is called choi tam in chinese)
Garlic (sliced)
Some cooking wine
Some cornflour
Salt and pepper

Instructions
1. Fry yellow onion, carrots and shallots in some olive oil until fragrant.

2. Add in cashew nuts, cauliflower and brocolli and stir fry.
3. Put a bowl (upside down) in the middle of a plate.
    (this will be the space you need to reserve for the leafy vegetables later)
4. Arrange the fried vegetables around the bowl.
5. Now, fry some garlic till fragrant.
6. Add in the leafy vegetables, a pinch of salt and sugar.
7. Put in a dash of cooking wine for a more appetizing fragrant.
8. Just before it is fully cooked, stir some cornflour in a little water and add in.
9. Lift up the bowl in the plate and serve this vegetable in the middle of the plate.

There you go!
Don't have to waste leftover vegetables in the fridge again!
I think it's also a suitable way to make your kids to eat vegetables...If vegetables are served in this colourful dish, I believe any kids (or young at heart) will love'em!

Honey Chicken Wings

Hey guys...i'm back...
wanna share this easy peasy recipe with all of you! It's called

Honey Chicken Wings



Ingredients
4 chicken wings
1 egg
tapioca powder
some salt and pepper
2 tbsp of honey
1 tbsp of plum sauce or tamarind juice
1 tbsp of black vinegar
1 tbsp of sugar
about 4 tbsp of chicken stock sauce
a little salt

Instructions
1. Marinade the chicken wings with egg, tapioca powder and a pinch of salt and pepper.
2. Set aside for half an hour and fry till cooked. Dish out.
3. Mix honey, black vinegar, plum sauce, sugar, salt and plum sauce.
4. Add in a drop of olive oil if you find it too thick.
5. Heat the sauce up in your pan and put the chicken wings in.
6. Stir until all chicken wings are coated with the sauce.
7. Serve and garnish with sesame seeds! (optional)

Sambal Asparagus with Prawn


I have been thinking about cooking something spicy for him the last few days...so I decided to experiment my skill in this recipe called...

Sambal Asparagus with Prawn

Ingredients
A few stalks of asparagus
Some prawns (de-shelled)
2 tablespoons of chilli paste (cili giling in hypermarkets)
1 tablespoon of belacan powder
1 teaspoon of tamarind pulp (disolved in some water)
Garlic and shallots (chopped finely)


Instructions
1. Fry chopped garlic and shallots in a some oil.
2. Add in asparagus and stir fry until half-cooked.
3. Add in prawns, chilli paste, belacan powder and tamarind pulp.
4. Stir fry until all asparagus are fully coated with the sambal paste.

Serve in a nice plate!
Sizzle!!


Stir Fried Choi Tam

Two days ago I asked my mom, do you dare to let me cook for tonight?
Hahaha...it's like passing the lives of all the family members into my hands...LOL
She said Yes!!! Yipee!! So this was what I cooked :

Stir Fried Choi Tam

I cooked mine soft so my dad can eat them easily  :)

Ingredrients
A few pieces Choi Tam (open up all the leaves and soak them in water)
Carrot (cut sliced or cut into strips)
Garlic (sliced)
Prawn (shells removed)
Cooking Wine (optional)
Sugar and salt
Corn flour (to thicken the sauce)

Instructions
1. Fry garlic slices in little oil until fragrant
2. Add in carrot and after a while add in the prawns.
3. Add in choi tam and water. Then stir fry them.
4. Add some sugar, salt and a few drops of cooking wine.
5. Add corn flour (diluted in little water) and stir fry a while.



Voila! You're done!

Cabbage in a basket

So this is the third dish that completes the whole meal yesterday...this dish is easy and yet delicious...can be eaten on its own..!


Cabbage in a basket


Ingredients
2 eggs (beaten with sugar and shoyu)
Cabbage (shredded/cut into strips)
Carrot (diced)
1 tomato (diced)
Yellow Onion (shredded)
Shallots, Garlic
Tomato sauce, chilli sauce
Soy sauce
Sugar, salt and pepper

Instructions
1. Pour a thin layer of the beaten egg in a flat pan.
2. Lift and line in a plate.
3. Fry onions, shallots, garlic and carrot in some olive oil until fragrant.
4. Add cabbage and stir fry.
5. Add tomato sauce, chilli sauce, sugar, salt and pepper and stir fry them.
6. Add the diced tomato and soy sauce.
6. Pour on the egg lining and garnish with mint leaves or parsley.

* Optional - the egg lining can be used as a wrap

Zesty Glazed Chicken

So, this is my second dish for the night...it's cooked with a heart full of love..!
All healthy and yummie! I call this dish....

Zesty Glazed Chicken

Ingredients
Chicken fillet (cubed)

Half a lemon (juice)
A little Honey
A little chicken stock
Sugar and salt
Corn starch (Dilute in water)
Black sesame

Instructions
1. Dip chicken pieces in egg and flour.
2. Brown them in a pan with some olive oil.
3. Add in lemon juice, a little honey, chicken stock, sugar and salt.
4. Stir fry it so all pieces of chicken are coated with honey and lemon sauce.
5. Add in corn flour and continue to stir fry.
6. Sprinkle with black sesame and garnish with mint leaves.

Cheezy Vegie

Just tried my cooking skills for the second time last night...and guess what..? I can cook! Yay!! Got to learn how to cook fast so darling dont have to eat unhealthy food outside in future...

 

So, I would like to show and share my self-created recipe with anyone reading my blog here, I call this dish Cheezy Vegie...The appearance of the dish is very usual but the aroma is so heavenly..! 


My very own --> Cheezy Vegie

Ingredients
A few florets of broccoli and cauliflower
A few mushrooms (sliced)
A medium sized potato (sliced)
Garlic, Onion, Shallots
Grated Cheddar Cheese
Sugar, Salt, Pepper
Corn flour
Thyme (Dried Herb)

Instructions
1. Fry garlic, onion and shallots in olive oil until fragrant.
2. Add in mushroom and potato slices.
3. Add some water and le it simmer for a while.
4. When the potato and mushrooms are almost cooked, add in broccoli and cauliflower.
5. Sprinkle some salt, sugar and a dash of pepper.
6. Add grated cheese and sprinkle thyme over it.

Serve hot!
